Pasta!!

I made something really good last weekend! I found a recipe in my clean eating magazine and I made a few changes, but it turned out really good, and it's something I will make again!

There is no pasta in this dish, the recipe called for spiralized zucchini, however my hubby doesn't like them too much so I swapped it for spaghetti squash. I used to use spaghetti squash pretty often instead of pasta, but it's been quite some time since I have done that, so it was great to have in this dish. The recipe for this is: 4 slices of bacon cut into pieces (I may omit next time to keep it meat free for me), and I added that to the pan to start cooking it, then chopped 1 onion, some mushrooms, I used cremini, and I used more than what they called for, they said 8 white mushrooms, but I used about double that, we really do love mushrooms. In the same pan I sauteed the diced onions and mushrooms for a few minutes, then added in 4 garlic cloves, minced, and sauteed that for a minute, then took it all out of the pan. I then added in some shrimp (instead of chicken), I used about 12 shrimps, and I cut them in half unless it was a really large shrimp then in three. I sauteed those a while, they were frozen so I wanted to make sure the water evaporated as well. I added everything back to the pan and added in a small can of tomato sauce, and 1 cup of coconut cream (put a can of coconut milk to the fridge for a while and when you open the can all the cream is on top, so you just scoop the creamy part, and not the coconut water at the bottom). Coconut water is great to add in a smoothie or to just drink like that. I already had some coconut milk in the fridge, so I just added it to that, which I use to make a London fog tea. So I made sure that the coconut cream melted and incorporated into the sauce, and let that cook for a bit while I minced up some parsley, and added that to the pan, then grabbed some fresh basil and roughly chopped that and added it. Oh I also added a touch of salt and a lot of pepper!

For the spaghetti squash, I just cut it in half length wise, and scooped out the seeds, and then added a bit of olive oil and added the squash cut side down to a cookie sheet lined with parchment paper. I put it in the oven at 400 for about 40 minutes. I got that in the oven first while I got things set up for the sauce, so that the squash had some time to cook before I used a fork to scrap out all the spaghetti squash and I added it to the sauce. Spaghetti squash isn't thick so even though I added a full squash, it like disappeared into the sauce. It was still very tasty but it was almost like eating a vegetable tomato sauce lol. Even though, I would still make this again as is, maybe adding a larger squash or two small ones to have more in there, or even just adding some pasta, which we always eat brown rice pasta. I'm thinking a sweet potato spiralized and added to this dish would be delicious as well but like the squash it would probably get lost in the sauce, so maybe two large sweet potatoes would go well and would still be very tasty!

Today I was in the kitchen again and I made a banana bread, and my plan was to make vegetarian burger patties, but in reading the recipe from Joyous Health, she also said you can turn them into balls, like a falafel and bake them, so that's what I decided to do. We don't make as many burgers at home in the winter, and lately I have been in the mood for bento box type lunches, so I thought forming them into balls would be perfect.

They turned out great! This is very easy to make. I first took out my food processor and added in one large carrot and 1/4 onion to get that grated by turning on my food processor for a bit. Then I added in a can of chickpeas, drained and rinsed (she says 15 ounces, but mine was 19 oz), and in went some fresh parsley, and basil. I added 2 tbsp of olive oil, 2 eggs, a touch of salt and some pepper, and a tsp of chili flakes. I also added in 1/2 cup of almond meal and 1/2 cup of a mix of ground flax and chia seeds, and turned the food processor on until everything was combined. I then used a cookie scoop to get them on a parchment lined cookie sheet and in the oven they went at 350 for 15 minutes. Once cooled, I kept a few in my fridge to enjoy this week, and I put the cookie sheet in my freezer to get them to freeze up before adding them to a Ziploc bag, this will prevent them from sticking together.

It made a lot so when I want some I just have to take them out of the freezer and warm them up to enjoy. These would be great in a salad, eat as is, or even in a wrap.

For bento boxes, I have put two together so far, yesterday and today, but I'll be making more next week as well. I will be making them all different, and hubby is interested in having some as well, he just hasn't had any yet. The mix of foods I have for my bento boxes are: Lentil/cranberry/almond salad, coleslaw, mix of veggies (sweet peppers, snap peas, cucumber, and carrots with humus), kimchi, the vegetarian balls that I have now made, and I plan to boil a few eggs for some hard boiled eggs. I was thinking to also do half sandwiches, with either tuna salad or eggs salad, I also have a few fruits that we can have (prunes, pears, nectarines, blueberries or apples). I also have some healthy seedy crackers that I can put either blueberry goat cheese on them or cashew cheese. We can even enjoy a small slice of banana bread in our bento box. I will see what I'm in the mood for, and just add a few different things and get to enjoy a nice mix of different foods for our lunches.

I haven't been doing so good with exercise this week considering we are fighting off a cold, but I'm almost all better, so I'll be getting back on track. Tonight's supper will either be the sweet potato pad thai, or a vegetarian fried rice, with this cucumber salad that I saw watching Girl meets Farm on the food network. The cucumber is spiralized, and you saute a few veggies, and she added a bit of ground chicken but I will skip that step, I try not to eat to much meat since it causes me endometriosis pain. I may add some shrimp, but then you also make this sauce, I know there's soy sauce to it, but I don't remember what else, but I have the recipe written down. I'll see which once he wants to have, and go from there.

Fall cooking/baking

 As I have mentioned, I love fall, and here's why


I love the colors and leaves on the ground, and it's a bit cool so makes walking/running nicer. There's not a lot of color with the leaves here but it's still pretty.

My friend and I also got together to do some cooking/baking and we were very tired by the end of the day, but we had so much fun! It started with cinnamon buns


They turned out amazing! They were so delicious! We shared one to try it out, and split the rest between the two of us. The guys also enjoyed them. Then we got busy with some turkey pot pies

We got a small turkey with no wings or legs, and put that along with some red wine, stock and herbs in her pressure cooker, and 15 minutes later it was ready! The stock was very flavorful so we of course used that for our gravy. We added in some onion, celery, carrots, mushrooms, peas and potatoes to our pies. The turkey was shredded with forks, and let that cook a while. We did have to add more stock, some milk, and more herbs/spices to help get more flavor. We added it to a single size serving containers and topped it with puff pastry. They turned out really good! We each got 7 of these single servings, so I kept two out and the rest I put in my freezer for another time. Both my hubby an I enjoyed some for supper a few days later along with some salad.

We were suppose to make apple strudels next, but we used more puff pastry than we thought we needed for the turkey pot pies. We didn't feel like going out to get more puff pastry so we did some research and found our next recipe to try out. We made some apple, butterscotch and oatmeal cookies

These turned out really good as well! It made a lot of cookies too! The following day I was going to my dad's for Thanksgiving supper, therefore I kept a few cookies for my hubby and I, and brought the rest to my dad's. They almost all disappeared, everyone loved them. My dad also had a mix of desserts which I couldn't resist on eating a brownie, which was delicious!

Thanksgiving supper was so good! It was so nice to spend it with family as well. I hope everyone else had a wonderful Thanksgiving.

I love Fall!

Fall is my favorite time of year. I'm sad that summer is over and winter is coming but I love the slightly cool weather, and all the beautiful colors! I have been keeping busy in the kitchen again, and last weekend I needed to use up a lot of my jalapenos from my garden, so I made some jalapeno poppers, and they turned out really good!


The recipe I found called for 12 jalapenos but I had a lot more to use up, so I doubled the recipe and halved 24 jalapenos. I did use gloves and it took quite a bit of time to halve them, and de-seed them. Then in my mixer, I put two containers of room temperature cream cheese, added in a lot of fresh chives from my garden, like about 2 tbps of them, along with 2 tsp of garlic powder and 1 cup of shredded cheddar cheese. Once mixed together, I filled each one and in a bowl I mixed in 2 tbsp of butter with 1/4 cup of panko bread crumbs, then I took each jalapeno and dunked it into the bread crumbs, the cheese mixture is sticky enough that they held it really well. I ended up running out of the bread crumbs so I made another batch which I had a bit too much, but got the rest done. I then individually wrapped each one in some plastic wrap, which I cut a piece and then cut that in half. Then got them into freezer bags and took the air out

You can bake these poppers at 400 for about 20 minutes, and even from straight out of the freezer. We had a friend over, so I sent him home with a few jalapeno poppers as well as a few muffins I made. The same day I decided to try these apple spiced muffins and they turned out really good!

I got the recipe from the Joyous Health cookbook, her newest one, and they are delicious! I love how healthy they are and they were great for breakfast along with a tea or latte. 

Two weeks ago, I ended up making some shepherd pies, which my friend was over, so she helped. One was vegetarian for me, and the other chicken for my hubby. The usual shepherd's pie is made with ground beef and corn but he's not a fan of corn so I like to make it with chicken. I get the chicken in bite size pieces and cook that up, then add in a chopped onion, carrot and mushrooms and once softened, I make a chicken gravy. I used the Epicure's herb gravy that they have, along with some chicken stock. So I put that as my base, and then top it with mashed sweet potatoes. For mine, I had gotten this vegetarian taco pack from them, it's pea protein and some spices, I used that for my base, again with some onion, mushrooms and carrots and I used the same herb gravy from Epicure with some vegetable stock. I might have also put celery but not sure if I did. Then topped with mashed sweet potatoes. In order to tell which one is which, I added a V with paprika to mine lol

He really enjoyed his, and I really liked mine as well. I will make this for sure again! I didn't make them too big so we didn't have too much leftover.

Now it's Thanksgiving weekend! So far today I have prepared a beef stew. It's smelling so good in here! The only other thing I need to make is to chop up some veggies, and make a dip to bring to my dad's on Monday for supper. Tomorrow however, my friend and I are doing a cooking/baking day and I can't wait!! The plan is to make chicken pot pies, just with a top crust. We also want to make apple strudels, and cinnamon buns. I think we may make a bread as well. It will be a busy but fun day!

Quiche!

This morning, I made a very delicious breakfast! A quiche using thinly sliced potatoes as my crust. This one is vegetarian, and I added in some nutritional yeast and feta for some creaminess/cheesiness.

It turned out really good! I used a mandolin to thinly slice a medium potato, which I kept the skin on. I oiled my pan, and added about 2 tbsp of butter, melted, to the potatoes along with a little salt, lots of pepper, and a bit of herb & garlic spice from Epicure. I mixed it all, and then layered my potatoes at the bottom and along the sides to create a crust. I had my oven at 400, and baked it for 15 minutes. In the meantime I got my egg mixture ready. I started with thinly slicing 2 green onions, cut up about 4 cremini mushrooms, then I grabbed a handful of spinach and chopped that up so there's no huge leaves. I added all the veggies to a bowl. I went to my garden and got some chives, parsley and thyme and cut that up finely together and added it to my bowl. I put a touch of salt, lots of pepper, about a teaspoon of onion and garlic powder, and a hint of nutmeg. I then added in some nutritional yeast, about 1/4 cup, and then about 4 tbsp of feta. They were big chunks so I cut it up more finely. Everything went in the bowl along with 7 eggs. I started with 5 eggs and I knew it needed a bit more, and 7 was a good amount. I poured that over the potato crust, and I had turned my oven down to 350, so I put that in the over for 30 minutes. We both really enjoyed it!

We also recently adopted a cat, he's about 13 years old, and it took a few weeks but he's gotten more comfortable with us.

His name is Baloo, and he's an indoor cat, but we let him enjoy our backyard a bit during the day. He doesn't mind a leash at all.

I have also been enjoying the outdoors, I usually start my work day with a nice short walk, than I do some weight exercises in the basement. A few weekends ago, I went with two friends over to Gatineau park to do one of the trails there, and it was beautiful!



There was a lot of stairs to climb, so very hilly, but it was a great hike! My friend is coming over today and we will walk a trail near here, and she will finally get to meet Baloo.

I also made these cookies last weekend

They are flour-less, and delicious! You can find the recipe here. I used dark chocolate chips in mine. I also made this Paleo bread.

I have been seeing the recipe pop up pretty often on Facebook, through the Joyous Health group, and a lot of people really enjoy it, so I thought I would finally try it, and it is really good. You can find the recipe here. I have froze some of the bread, which I sliced up first and separated the slices with parchment so I can easily take some out of the freezer when I want some. I knew I wasn't going to eat the entire loaf in a week so to make it last longer, some went in the freezer. I just put a slice, or two if he's having some with me, in the toaster, and once we topped it with some peanut butter and banana slices, and another time he had it with peanut butter and jam, and I had mine with almond butter, a little drizzle of honey and some hemp seeds. And I enjoy my slice of bread along with a London Fog tea, which I make her recipe and it's so good! You can get the recipe here.

I also made a lentil and veggie salad, which turned out really good.

I added in about 1/2 cup of cooked lentils. Then I sliced up a carrot, cucumber, green onion and some kale. Then thinly cut up some fresh parsley and chives and added that in a bowl. The dressing was some olive oil, rice wine vinegar, maple syrup, and a little salt and pepper.

My garden and a delicious bowl

 My garden has been doing really well. I have had to support my tomato plant even more with sturdy sticks. They aren't ready yet but I have a bunch of green tomatoes so far. Here's a few veggies I took from my garden


So I put a jalapeno next to my green pepper so you can see the size, not a big green pepper but it was delicious! And that's one huge cucumber! It didn't have a lot of water content, but it was still really good!  We are going to Sudbury soon so we plan to bring some jalapenos with us, maybe even a cucumber, cause we got a huge amount of jalapenos!  There's a cucumber ready to take out, and another just about ready as well. I have a few more green peppers almost ready to pick as well. I had transferred my spinach and lettuce to pots cause the tomato and cucumber plants are taking over, and unfortunately my spinach didn't make it. I also moved over my kale to give it a bit more room but that and the lettuce are still doing great. I plan to use some kale for a salad tonight. I'm cooking up some salmon to go along with our salad.  My herbs are still doing amazing, and I was able to try out a few blueberries and they are delicious! There's not a lot of blueberries, but there's a few that we will get to eat.

A friend of mine told me that Mad Radish opened up near our place, so I got my hubby on board to try them out. We first tried a burrito, which was delicious! His was chicken and mine was with tofu. This week, we decided to try out their bowls, here's mine

So mine is with tofu, brown rice, veggies, kimchi, and roasted sweet potatoes. It was delicious!! I don't remember what the dressing was, but it was good. This bowl had a bit of kick, and it was just very flavorful and filling!

I've also been going out most morning's for a walk

 

 

 

 

 

 

 

 

And I am doing some weight exercises as well. This past week I have been meat free, just having vegetarian meals, and some fish. Been staying on track with some healthy eating, trying to get back on track to being healthy. We are going to Sudbury soon, so I'll do my best, but once we are back home, I'm doing my endometriosis cleanse to get me back on track. So with eating healthy this week, I couldn't help but make the sweet potato veggie pad Thai again, it's one of our favorite recipes to make

I enjoyed every bite of that! So much flavor and makes me feel good that I'm eating lots of veggies! Pretty sure I have said this before, but it really is a must try!

 It's been a quiet weekend for us, but we are ok with that. Hope everyone is having a great week!

Burgers!

 I got busy in the kitchen yesterday making two different burgers. First one I made was Salmon burgers

These turned out really good! I used the Epicure West Coast Burger seasoning, and used the burger press to form my patties, and they turned out great! It made 6 patties, and I froze a few for another time. I also made some vegetarian patties

This is from the Joyous Health Cookbook. These too, turned out really good! It made 5 patties, although I probably could have had 6 of them, had I not made them quite as thick. I froze 4 of them and had one for lunch. I topped it with some guacamole and left over garden salad that I had, not much, just enough to top it, since I also had some potatoes with that. It was really good!

Burgers are great to eat, and now I have two options, although these patties are great to just have them like that as a healthy protein option with your meal also.

Friday we had my dad and his girlfriend over for a BBQ, to celebrate father's day, and we didn't give him his birthday gift yet, so it was nice seeing them and spending some time together. We cooked up a chicken on the BBQ, my hubby spatchcocked it, and put some BBQ sauce, as well as the chicken and rib rub from Epicure. We also did sliced potatoes and onions in foil and also cooked on the BBQ, with a nice garden salad. It was a delicious supper! Dessert was a platter, of fresh strawberries that I got from the stand near my place, there's a farm close by that grow a lot of strawberries. They are small but very tasty! I also added cherries, and brownie cookies that I got from the Chocolate Cover Katie site. They turned out really good! I also put together my own little dessert with some help from Epicure again. I used their chocolate mud pie mix, all I had to do was boil a can of coconut milk with the powder mix, and then take it off the heat and add yogurt, either non-dairy or regular yogurt, which I used Greek Yogurt. I completely forgot to get coconut yogurt, but thankfully I had some Greek yogurt to use, which I had bought to make the guacamole. Once the yogurt is mixed in, you put it in the fridge to set. I thought it was going to be more like whip cream type of texture but it was more like a jello type texture. I mixed it and put them into small chocolate cups that I bought. And then in a pan I roasted some slivered almonds, which I crushed them up more, and then added a bit of maple syrup and topped the cups with those, and a small slice of the strawberry

They turned out really good! and don't they look cute! It was a really nice evening and yesterday we went for a 45 minute bike ride since it was nice out. It was warm out there but it was still a nice ride. This morning I made a really delicious veggie omelette, with mushroom, spinach, green onion and some parsley. The spinach and parsley is from my garden. I also added a little cheese, and it was really tasty! I enjoyed the omelette with a kiwi.

Garden and biking

 Since my last blog post, my garden has grown and it's doing really well


I used quite a bit of basil for a pasta I made and there's still a lot there, the very tall one in the back of my veggie garden, that's the jalapeno. I have 2 really good size jalapeno's so far and one that's like a medium size. My bell pepper, I have one that's small but it's growing. Nothing yet with my cucumbers, or tomatoes and I had to trim back my kale and spinach, especially the kale cause it was starting to take over! I only have green blueberries so far, so still some time to go before we can try them. Lettuce is really good as well, which we used some in a BLT, using a huge tomato that we got from my mother in law. The BLT was more tasty cause of the fresh tomato and lettuce that we used.

We are off this week, and we haven't done to much so far, just a few things at home, and had a few appointments to go to, which we did get our first vaccine shot. So today since it was beautiful outside, we decided to go for a bike ride, considering we got our bikes tuned up, so it was time to take them out again. We tried a new trail that he new about but we have never been down, well I went down a small part of it when I did my nighttime run 8 years ago. It was a really nice trail! They even had a few spots to do workouts, like monkey bars. We were gone about an hour, and it was great!














We decided to take this week off cause it was my hubby's birthday and he didn't want to work the week of his birthday. I asked him what he wanted to have for supper and we had this

Chicken nachos! They were so good!! I made the guacamole, and he helped me put it together.

Next thing I want to make is some salmon burgers, and vegetarian patties. I got the burger press from Epicure, and a spice for the salmon burgers so I am going to try it out. Not sure which vegetarian patty I will make yet, but I will be looking at my recipes to decide. It is Father's Day this coming weekend so my dad will be coming over for a BBQ. I'm thinking beer can chicken with some potatoes and a salad.

My garden

 I'm long overdo for a new post, but I have been busy. So excited to have my garden again, but it's bigger then any other year cause I ended up purchasing a Vegpod. I saw commercials on it, and when I went to get my herbs, I saw blueberries, so I decided to get some plants of those too. I have never had to care for my own blueberries before, so I looked online and seems like rabbits and birds love them as well, so that made up my mind and I got a Vegpod. So with that purchase, I did another trip to get more vegetables to grow. Not sure how well they will turn out cause I'm new to this, but so far so good. Here's the start of my garden


The top photo starting at the back to the left are my blueberries, middle is lettuce then to the right is cucumbers. In the front on the left is sweet peppers, middle is tomatoes, then I have kale towards the middle and spinach in the front. Then for my herbs on the left at the top is basil, middle is rosemary and in the front parsley. The right at the top is chives then thyme.

My hubby also decided to get my wooden stand a bit more sturdy and two tiered, so here's what it looks like now

The pot on the step is last year's thyme, that decided to partial regrow. I took out most of the dead ones, and kept what was still alive. It's still doing really well. And I really love what he did to my wooden stand, the pots fit in better, cause they use to be side by side, and the pots were snug together, so at times it was hard to get them to go straight. 

Here's what my vegetable garden looks like as of yesterday, which I made a few changes.

The plant in the middle at the back, you can see a black thing holding it up, that is a jalapeno plant. I had kept it in the big pot I got it in, but realized I have room for it in my vegpod, I just had to shift my lettuce more to the middle and everything fits well. So as you can see it's growing quite nicely. I didn't take a new photo of my herbs but they have grown quite a bit as well. My basil is a little more then twice the size, so I am making some pasta for supper tonight and I'll for sure be adding some fresh basil, chives and parsley. Here's what my vegpod looks like, this was before I put anything it in.

I love how everything is protected, so no animals come by to eat my garden. Our neighbor next to us, had done a garden and they lost it all from animals coming in and eating it. I also fixed up my front garden to make it look really pretty.

The tiny flowers by the girl and guy in my garden haven't come out yet, but they are a redish flower that is suppose to bloom out. My flowers in the back yard have come out though and they look so pretty!

To the left of these flowers, I have a big bush of just green leaves right now, but huge white flowers come out of them. These come back each year and I'm happy about that. I did work on getting rid of a lot of weeds around there, so this looks cleaner now lol. 

In terms of cooking, I have made my own salsa, which turned out really good

This is the salsa over some salmon, it was very yummy! I also made a really healthy breakfast one morning

So two hard boiled eggs topped with some of my fresh chives, a little salt, pepper and paprika. I have some mashed up avocado, cucumber slices, raspberries and kiwi. It was very good! Another tasty breakfast

I did an scrambled up omelette with ham, spinach, onion and mushrooms with a little bit of feta cheese, and then some raspberries and cantaloupe. I have made a few without meat, cause I do try to not eat to much meat cause it aggravates my endo, causing me some pain.

We also had to get a new dishwasher cause our old one started leaking, and the cause of the leak was due to corrosion so it was just easier to get a new dishwasher. Glad we did cause it's so much quieter!! I am still working out as well, this past week has been a more low key workout, so all walking, but starting tomorrow I'm getting back into bigger workouts, with some running and weight exercises.

This weekend has been pretty quiet for us, other then de-weeding a lot of our back yard, which we had to stop cause it started to rain, along with thunder. It's a pretty hot and humid weekend so not doing quite as much outside. They are also calling for more rain this afternoon, so it's more of relaxing day today. I did also get my Epicure order not long ago. I got the burger press, so I can make my own veggie burgers. I also got a spice that goes into salmon burgers which I want to try. They will be good in a burger or just to have on it's own. I have to find the recipe and give them a try. Hope everyone is having a good weekend.

Stocking my freezer

Quite late on this post, but Easter weekend I did fill up my freezer a little more, with the tip I learned from Giada. 

To the left I have cooked Quinoa, I did 2 cups quinoa with 2 cups of water. I left some in my fridge and threw some in salads, and froze the rest in freezer bags. I haven't taken more out yet, but I know I will at some point soon. To the right is lentils, again 2 cups worth, and I added some garlic and thyme to flavor them up a bit. I again put some in my fridge and froze the rest.

I have also been busy making some delicious breakfasts. I put together some chia seed pudding, which the recipe I followed, I used a can of coconut milk instead of just almond milk, with some maple syrup, and some vanilla extract. I added 1/2 cup of chia seeds, but it was way to much, it became very thick, so I added a lot of almond milk! I think next time I'll do the same, a can of coconut milk, with some maple syrup and vanilla, but I think I'll start with 1/4 cup of chia seeds to see how that works out. I can easily add a bit more chia seeds if it's not enough. You have to let it sit for a while, and make sure to stir it as well, it needs time to absorb all the liquid. So here's one breakfast I did with the chia seed pudding

So it's half a banana in slices, with the homemade granola I made, using quinoa flakes, some almonds and walnuts. It was really good! Another morning I added blueberries instead of banana, which was also good. I had also bought some yogurt to make a dip for veggies, so I took some of the yogurt, and added berries, a bit of maple syrup, and the granola

It was really good! I still have some berries left, so I think I might make a smoothie bowl sometime this week, and I still have more granola left. Last Monday was my birthday, so I decided to make my absolute favorite meal, lasagna. I used a bread pan so it's just one piece each, since we both don't do well with cheese, and I don't do so good with meat, so it was a perfect portion for us. I did build 2 more to store in my freezer for another time.

It was delicious with the slice of garlic bread and of course enjoyed it with some wine. Since we are on strict lock down, it was nice to at least have my favorite meal even though I had to make it myself lol. I do love cooking so I didn't mind, I had fun getting the sauce ready in the morning, and letting it cook slowly till an hour or so before supper. Then I just had to build the lasagnas, and got them in the oven. Once cooled enough I put two in the freezer, and one we enjoyed.

I have also been going outside for some walks, and yesterday we went for a nice long bike ride up to the Ottawa River. I haven't seen that part of the river before, so it was nice. The weather was perfect for the bike ride. We went along a trail so that made the ride even more amazing.




It was a great ride! Now that my bike is set for more biking, I would like to get out there more with my bike. When I use to go into the office to work, when it was nice, I would bike to and from work, so last year I didn't get much biking, and I miss it. I enjoy walking as well though, especially if it's hiking.

There's a small trail close to our place, it just goes around in a circle between houses, but I love being surrounded by trees so walk over there sometimes. I did a little bit of running that day. I would like to get back into running as well. I haven't done much in a while and I also miss it.

Yesterday I did have a bit more meat, I cooked an entire chicken on the BBQ, it was spatchcocked. I put the BBQ on the lowest setting, and cooked one side for 30 minutes, and then flipped it and cooked it for another 30 min. The skin was crispy and it was delicious!! Had that with some salad, and a little potato salad. Friday night we had burgers, mine was vegetarian, and it was delicious!
