Homemade Potato Tots

We got a lot of snow again, 52 cm in one day! So I got a good workout in that day, my hubby went out twice on his own, then I went once on my own, then we went out together. He was working from home which is why he tackled it on his own the first two times. Then yesterday we hit 6 and got some rain, then today back to more snow, but we aren't suppose to get as much.

I did decide to try to make homemade potato tots on Friday, and they turned out good
I got the recipe from Southern at heart on the Food network. It's a few steps but they are easy to make and so much healthier!

I'm still watching quite a few cooking shows, it's giving me ideas on what to make, but it's been a busy week so I haven't made to much. I do plan to make a vegetable, quinoa, lentil soup with some miso and turmeric for flavor.

Yesterday I went to see my hubby play hockey, then we met up with my dad, brother, nieces and nephews for supper at The big Rig, we all have never been there, and we got a really good seat right by the kitchen so we can see some of the action back there. I wanted a ruban, because I love watching the movie Chef and been wanting a ruban ever since, and the waitress came back and said they weren't able to make it, which got me really disappointed. I ended up getting the jambalaya instead, and it wasn't to bad. My hubby got the nachos and those were really good! Everyone else really liked what they got, then my brother and nephew went to see Kung Fu panda, and the rest of us went to see The 5th wave. It was really good, they followed the book pretty closely. Looking forward to reading the second book, then the third once it comes out in May. It was a great evening, and now today it's about house work and being in the kitchen, so far I've made a potato salad. I might just make some carrot muffins to.

Blender

I haven't posted in a while because I have been fighting off a few things, and I still have a bit of a head cold but it's almost gone. Thanks to getting bronchitis, and I do still have endometriosis, they are lowering my immune system so I seem to be catching every bug there is, and this year has been pretty bad.

Weeks back I ended up making fish cakes, I haven't made some in so long, so decided it was time to try some again, and they turned out really good!
The recipe ended up making 4 of them, and we had tartar sauce with them. They are really easy to make and I really should make them from time to time. I used my sprouted bread that I buy from the health food section of the grocery store, as my bread crumb, to keep them healthy.

I have been consuming quite a bit of soup, it's my comfort food when I'm not feeling well. A friend at work also told me about this slaw type salad with cabbage, kale, dried cherries and pumpkin seeds, so I have become rather obsessed with it, it's so good!

To help provide my body with more nutrients, I have done some juicing as well. I juiced carrots, kale, cucumber, and celery. I do still love my smoothies, and have been making some but with old faithful. My vitamix started to give me a hard time, and when I would turn it on it would start to smell like something was burning, so I called, and thankfully I was still under the warranty, so they emailed me a shipping label, got the base and container in a box well wrapped, as instructed, and put the shipping label on and off it went to them to get fixed. I got it back this week and was happy to see that they gave me a brand new container, lid and stick, so I have boxed up the old lid and stick in case I need it again at some point. The base, I think is the same, but the top for sure has a new rubber. I'm so very happy to have my Vitamix back. Don't get me wrong old faithful works well also, but not quite as well because when I put flax seeds in my smoothie, I often still have whole pieces.
Some may recognize the old blender, it was my parents, which they got when they got married, and it's true what they say that they really don't make them like they use to because it still works great. Now why don't I just use the old one instead of getting a Vitamix, well for one, Vitamix has a bigger container so I can make a lot at once when needed, it has more power then the old one, and I admit it, it does look prettier, but the old one really does take me back to when my dad would make us some root beer floats and some milkshakes. What I love about the Vitamix to is it can handle a lot of frozen fruit to make your own "ice cream", thanks to the stick they provide, you just remove the middle part of the lid, and put the stick in and help things along to blend. You can also make soup and leave the machine on long enough and it heats it up as well.

I do have to give a shout out to Vitamix, they were amazing. I mean to get it shipped and fixed free of charge and to give me a new container, lid and stick was even more amazing to see. It really didn't take long to ship and get it back. Although it did take a little longer thanks to a mix up. I got an email saying they were shipping it to me, and for some reason when it got to Ottawa they saw my address as being incorrect so they shipped it back. I called Vitamix and they did have my correct address, so they shipped it again, but express and I got it in no time.

Since I have been sick I haven't been doing quite as much, so this weekend since we have no plans, I have been keeping busy at home, which works out because it's a very cold weekend! My house is now all clean, and I have baked some banana bread. I might do more baking and cooking tomorrow but not sure what to make yet. As I sit here typing, I also have coconut oil and honey in my hair. It's been in for an hour so I will go take my shower soon to wash it out and then my hair will be so soft!

Tomorrow is Valentine's Day, so I hope everyone has a wonderful weekend. Unfortunately my hubby has to work all weekend, but we usually don't do much for Valentine's day. All we ever do is a date night at home with a wonderful home cooked meal, some wine, and we usually watch a movie together. Although we don't need a day to show how much we love each other, we have date nights from time to time, either at home or we go out. We did also have our anniversary at the end of January, so we went to Moxie's for supper and then went home to watch a few movies.

Well now it's time for me to relax with a few movies since I have done a lot today. Hope everyone has a wonderful Valentine's Day!
