Stocking my freezer

Quite late on this post, but Easter weekend I did fill up my freezer a little more, with the tip I learned from Giada. 

To the left I have cooked Quinoa, I did 2 cups quinoa with 2 cups of water. I left some in my fridge and threw some in salads, and froze the rest in freezer bags. I haven't taken more out yet, but I know I will at some point soon. To the right is lentils, again 2 cups worth, and I added some garlic and thyme to flavor them up a bit. I again put some in my fridge and froze the rest.

I have also been busy making some delicious breakfasts. I put together some chia seed pudding, which the recipe I followed, I used a can of coconut milk instead of just almond milk, with some maple syrup, and some vanilla extract. I added 1/2 cup of chia seeds, but it was way to much, it became very thick, so I added a lot of almond milk! I think next time I'll do the same, a can of coconut milk, with some maple syrup and vanilla, but I think I'll start with 1/4 cup of chia seeds to see how that works out. I can easily add a bit more chia seeds if it's not enough. You have to let it sit for a while, and make sure to stir it as well, it needs time to absorb all the liquid. So it's half a banana in slices, with the homemade granola I made, using quinoa flakes, some almonds and walnuts. It was really good! Another morning I added blueberries instead of banana, which was also good. I had also bought some yogurt to make a dip for veggies, so I took some of the yogurt, and added berries, a bit of maple syrup, and the granola

It was really good! I still have some berries left, so I think I might make a smoothie bowl sometime this week, and I still have more granola left. Last Monday was my birthday, so I decided to make my absolute favorite meal, lasagna. I used a bread pan so it's just one piece each, since we both don't do well with cheese, and I don't do so good with meat, so it was a perfect portion for us. I did build 2 more to store in my freezer for another time.

It was delicious with the slice of garlic bread and of course enjoyed it with some wine. Since we are on strict lock down, it was nice to at least have my favorite meal even though I had to make it myself lol. I do love cooking so I didn't mind, I had fun getting the sauce ready in the morning, and letting it cook slowly till an hour or so before supper. Then I just had to build the lasagnas, and got them in the oven. Once cooled enough I put two in the freezer, and one we enjoyed.

I have also been going outside for some walks, and yesterday we went for a nice long bike ride up to the Ottawa River. I haven't seen that part of the river before, so it was nice. The weather was perfect for the bike ride. We went along a trail so that made the ride even more amazing.




It was a great ride! Now that my bike is set for more biking, I would like to get out there more with my bike. When I use to go into the office to work, when it was nice, I would bike to and from work, so last year I didn't get much biking, and I miss it. I enjoy walking as well though, especially if it's hiking.

There's a small trail close to our place, it just goes around in a circle between houses, but I love being surrounded by trees so walk over there sometimes. I did a little bit of running that day. I would like to get back into running as well. I haven't done much in a while and I also miss it.

Yesterday I did have a bit more meat, I cooked an entire chicken on the BBQ, it was spatchcocked. I put the BBQ on the lowest setting, and cooked one side for 30 minutes, and then flipped it and cooked it for another 30 min. The skin was crispy and it was delicious!! Had that with some salad, and a little potato salad. Friday night we had burgers, mine was vegetarian, and it was delicious!
