Market

It has been a 2 weeks since my last post, life has been a bit hectic. Two weekends ago, I did get into the kitchen and tried out the chocolate cake from Chocolate Covered Katie, and it turned out really good!
I will make this recipe again. It was simple, and the icing was so good! So much better then the store bought sugary stuff. The icing was made with coconut milk (thick part only, I saved the water at the bottom of the can to put in a smoothie), some cocoa powder, a bit of maple syrup and vanilla.

Last weekend I went to Sudbury on my own. Friday night was our first baseball game, and my hubby didn't want to miss it, so I took half the day off work, and left at noon on Friday and came home Sunday. I went down for my cousin's baby shower, which was a great turn out. Her mother in law made this amazing fruit basket, she turned the watermelon into a baby basket, and created a baby inside then surrounded by pieces of fruit.
This weekend has also been busy, but very glad it's a long weekend. So nice being at home today instead of at work.  Friday night we played baseball, and unfortunately we didn't win, but we had a lot of fun. Saturday was my busiest day, I went to the hair dressers, then went to Orleans to help out a friend, her mom was moving, so I helped out. Then went back downtown to stock up on more meat, which I got some steaks which will be for tonight's supper, and yesterday I cooked up the whole chicken that I got. Then the rest of my purchase went into the freezer, I got a pork tenderloin, pork chops, and peppered steaks, as well as beef tenderloin. I still have plenty of chicken, bison, and bacon in my freezer. Most of the time I do have vegetarian meals, but I do enjoy meat from time to time. I did mostly vegetarian or fish this week, so thought I would cook up some meat for the weekend. Then I walked around the market to get some fresh vegetables and fruit. I also got a pot of a variety of herbs, which I have outside. I love having fresh herbs on hand, and they never live long inside the house so when it's nice outside, it's great having herbs outside so I can grab some when needed.
My purchase was cherries, blueberries, raspberries, broccoli, snow peas, green beans, peppers (red, yellow and green), tomatoes, and romaine lettuce. It was very busy downtown, it was the Ottawa race weekend, which I knew I wouldn't be ready by then for a race, so I would like to sign up next year, since I haven't done this one yet. It was so nice being downtown and getting fresh food.

Yesterday I decided to finally try making my own ice cream, with the ice cream bowl that my dad got me for my mixer. I got it for Christmas and weather was so cold this year, so I haven't been hungry for ice cream until now. I made a simple recipe which included, 2 cups almond milk,  1/2 maple syrup (she said sweetener of choice), a sprinkle of salt, and they suggested vanilla extract, but I used a vanilla bean. I put the mixture in the freezer for a half hour to make sure it was nice and cold, then added it to the bowl and let it do it's magic.
Once it was at a desired consistency, I put it in a glass bowl with a lid and put it in the freezer. After our supper, which was the roasted chicken with a mushroom wild rice, and green beans with garlic and red pepper flakes, I had some ice cream with some fresh blueberries and raspberries
It was so good!!  So nice to have some ice cream and not have an upset stomach after. I know I do have other recipes for homemade ice cream, I do plan on finding them and trying them out. I will of course make this recipe again, it was simple and delicious, this recipe I got from Chocolate Covered Katie.

There are more markets around Ottawa, and found out there's two near here, about 10 minutes away, so I do plan on checking those out. There's two others that apparently are indoor during the winter months, so I also plan on checking those two out as well. They are a bit further, about 20 minutes or so, but I think it will be worth the trip.

Today I do plan on making some snacks, I want to make chocolate muffins, and raspberry bars. I will also chop up some vegetables, to prepare salads for my lunch, and also have them ready to grab when needed.
