Banana Caramel Sticky buns

It's been another busy weekend. Friday night we went to my hubby's uncle's house for supper. Got to see their new kitchen as well and I would love a kitchen like theirs!  Yesterday the house cleaning and laundry got done, and then I made Banana Caramel Sticky buns. I have made these many times and they are so good!
Here's the recipe:

1 large very ripe banana, mashed
6 eggs, lightly beaten
1/3 cup melted ghee or coconut oil
1/2 cup honey or maple syrup
1 tbsp vanilla extract
2/3 cup coconut flour
1/4 tsp salt

Topping:
1 cup pecans or walnuts, chopped
1/4 cup honey or maple syrup
1/4 cup ghee or coconut oil
2 tsp ground cinnamon
1 tsp coconut flour

Preheat oven at 350F. Mix all ingredients for buns with a wire whisk. Evenly pour into a well greased 12 cup muffin pan. ** Do not use paper muffin liners**
Mix all ingredients for topping with a fork and crumble topping on buns
Bake for 20-25 minutes until cooked through. Cool for about 2 minutes, then run a knife around each bun to loosen from pan. Immediately remove from muffin tin to a wire rack to finish cooling. You may need to scrape the topping back onto the buns as you remove them, but the topping will set up as they cool.

Once those where ready we were off to my hubby's hockey game, although I didn't stay. My friend dropped off her hubby and his brother, and I hopped in with her and we went to her place to get busy in the kitchen. We started with getting the sauce ready for our supper. We made a tomato and pesto sauce and had that with some spaghetti. Then once the sauce was on the stove top on low, we got dessert ready. From the chocolate covered Katie cookbook we made the lemon and chocolate donuts. They were both delicious!! They were also very easy to make and they were baked not fried.











They were a big hit!!  Still some left over as well so they will be great to snack on this week. Today I also go into the kitchen again and prepared two recipes from the Thug kitchen cookbook, and they both turned out great. First one is a roasted beet and quinoa salad.
I made this for a few lunches this week. Then I prepared the roasted potato salad with fresh herbs
We will have this for supper tonight. I did take out london broils to cook up with the salad, and I'm thinking to roast some carrots to go along with it. I have cut back on meat a lot, but really in the mood for some tonight.

Weekend has gone by really fast, but looking forward to sharing those muffins with co-workers, I double the recipe so I can bring some to work. There's a lot of the potato salad so I'm sure there will be some left over, and also from the Thug kitchen I want to make the 5-spice fried rice with sweet potatoes for supper sometime this week. With the donuts, muffins, and delicious meals, it's going to be a good week I'm sure.

Chia pudding and granola

Yesterday I had more fun in the kitchen. I decided to get a few items ready for breakfast. I started with sauteing some veggies for some muffin "quiches". I added onion, mushroom, zucchini, garlic, and a bunch of watercress greens. For spice I did a touch of salt, some pepper and some turmeric. Once cooled, I added 6 eggs and mixed it all together. I greased my muffin tin with coconut oil and added scoops to each one, which I ended up with 9. I baked it in the over at 350 for about 20 min

Can't wait to try them! The mason jar on the left is chia pudding. I took one can of coconut milk, mixed it with half a cup of sprouted chia seeds, with about 1/4 cup of vegan chocolate protein powder and I added about 3 tbsp of maple syrup and mixed it all together and it's all about letting it sit for a while till the chia seeds do their magic. I tried a bit of it and it was delicious! In the background, it's just my Epicure books.

Today I went back to the kitchen to prepare a few more things. I started with preparing my pork roast. I seared it in a pan with some Dijon mustard and salt and pepper. In my slow cooker, I cut up a small onion and a carrot and added that to the bottom. I pored in a can of beer, and then added some fresh parsley and rosemary. I added the roast in and it's been cooking on low since about 10:30 this morning. I then got busy with preparing my pasta salad with an Asian sauce. The dressing I got from the Pioneer Woman on her site right here. Note that instead of the brown sugar I used honey.

I started off by boiling some water and added in some brown rice pasta shells and cooking that up. My veggies were these: 4 green onion, a zucchini, 3 small peppers (red, orange, yellow), some pea sprouts, and I got a bag of shredded carrot, cabbage and broccoli, so I added a bunch of that in there to.

 Mixed everything in a large bowl and then added it to a bowl to store in the fridge. I then had some quinoa soaking for a few hours in water, so I drained that, added about a half cup or so of sunflower seeds, pumpkin seeds, cashews, walnuts and just a little bit of slivered almonds, I didn't have much left of it. I added the quinoa (1 cup), and then added 6 tbsp of coconut oil with 6 tbsp of maple syrup. I mixed it all in a bowl, then on a cookie sheet I added parchment paper and spread everything out and baked it in the oven at 325 for 20 minutes. Half way through I tossed it.
It's now in a mason jar in my fridge. The plan is to have some granola with my chia pudding. So I'm quite set for the week and I'm looking forward to eating it all.

I also did my long run for the week, and did another 10 km run. My time was a little better then last week and I am getting stronger cause it's becoming easier
So I was again watching a run on my tablet, and from what you see on the treadmill my time is an hour, 7 minutes and 18 seconds. The time and distance flash back and forth so decided to show the time this week where last week I showed the 10 km. Soon time to get the rest of supper ready, I will make some mashed potatoes and roasted asparagus with the pork. I am still trying to eat vegetarian, fish and shrimp only as much as possible but I will have a bit of the pork roast today, and get back on track tomorrow. Weekends I tend to be a bit more flexible.

One Part Plant

Last weekend my friend came over on the Sunday and we went for a nice long run outside, 18 km. It was a beautiful day, and we got to run along the trail close by. It wasn't quite long enough so we ran till we couldn't any longer and then turned around and ran back. It's such a beautiful trail with so many great trees around. We each had our music and we did really well. Once we were out of the trail we were still doing well so I took her to another one close by to finish our 18 km run. At about 12.5 km in, I needed a bit of a walking break. The tiredness was kicking in and it was nice to walk for a bit, but it was hard to start up again. We got to 14 km and then turned around to make our way back to my place. Both of us were really starting to feel it, just sore in the legs/feet and tired but we made the 18 km!

Come race day I'm sure we will do fine, yes tired and sore still at the end but we will have a lot of people around us to motivate us to keep going and I haven't had the feeling in a while but that feeling is amazing at the end on I have done it! I have never done the Ottawa Race weekend so I'm excited to be there. We stretched after our run and I made some really great tasting smoothies with lots of spinach, one banana, two scoops of Vega Vanilla protein powder, some cherries and almond milk. They turned out delicious and a great way to re-fuel after such a long run. Before she went home I sent her off with a few muffins that I made, they are vegan and really good!

She found out that I have endometriosis and ended up seeing this book and told me about it. I read about it and it caught my interest. Since my birthday was coming up and my dad asked me for gift ideas I made sure to include this book and he did buy it for me. I already read through it. She only does a shout out to endometriosis and explains her journey into one part plant. It's a good read and the recipes look amazing! When I saw the recipe for these vegan muffins I wanted to give them a try.
They turned out great! It's with chickpea and brown rice flour. They aren't a really sweet muffin but they are still tasty. The chickpea flour makes them a little more doughy but I really like them.
Above is also a picture of a potato salad that I made. I did shaved carrot, celery sliced, green onion, I roasted the potatoes in the oven and to cut back on the mayo I added in an avocado and put in some lime juice to help stop the avocado from browning. For spices I put in some dill, paprika and pepper and a touch of salt. It was really good!

Tuesday we had a date night, we ended up going to Kelsey's for supper and then went to the movies to see End Game. I was craving a burger and I could have gone veggie patty but I was really hungry for a beef patty
It was really good! He had the fish burger, which he did enjoy. That would have been another great option for me to help avoid endo pain but I just really wanted a true burger and I did enjoy every bite.

This weekend I've kept really busy. I had Friday off as my compress day off, so I cleaned up the house and went for a 10 km run. Last weekend was tough so I don't want to over do it in training so I only did 10 km. Yesterday I had borrowed my dad's carpet cleaner so I got that done with the help of my hubby to empty out the living room. I did a major clean up in there which it really needed it. I guess part of some spring cleaning. I also got busy in the kitchen and tried a recipe that a friend sent me, they are banana muffin cookies. I made them slightly different, I still stuck to the white flour but instead of white sugar I went for coconut sugar. They turned out great! I also made our favorite muffins, made with lots of eggs and some coconut flour. I have made them many times and will keep making them from time to time. Hubby requested it and since I had the ingredients, I made them. I had to wait for the carpet to dry so great opportunity to spend time in the kitchen.

As of tomorrow though, I want to be on an cleanse, my own version of a cleanse. I will keep things on the light side this week. Breakfast will be a smoothie with almond milk, lots of greens, some fruit, vegan protein powder and some chia seeds. Snack will be a drink that I'll put together with coconut water, lots of greens and a little fruit. Lunch will be salad with salmon or shrimp, and supper will be a miso soup with a lot of veggies. I haven't been eating as healthy and I feel like I could use a bit of a detox and then I'll get back to my endo diet. Doesn't mean I won't have a treat here and there but I do want to get back on track. As her book above states it's all about at least having one plant meal each day. Race day is coming, and we did sign up for Spartan and thinking to sign up for a full marathon to so I want to be nice and healthy which also means more energy and a lot less pain. Which my endo pain still comes up here and there but when I did cut back on meat and cheese my pain went away a lot, so before things get bad again it's time to cut back. I do try to stick to more gluten free as well.

Hope everyone is having a wonderful weekend, especially since it's beautiful out there! I went out this morning for a 5 km run and it was so great! I'm into a new book now, Let it go by Peter Walsh. It's all about de-cluttering and how to do that when there are items that are very emotional. A friend of mine told me about it and I do have a lot of my mom's things, along with a lot of my own stuff, therefore I thought I would read through it and see if it will help me.

De-cluttering, Cooking and Baking

The start of the year I still had quite a bit of vacation days left so I decided to take more time off work to get some de-cluttering done. I have come a long way, just 2 more areas to go through and I'm done! One area will take me quite some time, the basement. We don't have a finished basement so we have a lot down there. Including the things/clothes that I have decided to get rid of. This has been a project I have wanted to do for a while and I'm glad I was finally able to tackle it. I did some here and there but over the past weeks, I have tackled it one room at a time.

I must say, I feel so much lighter with less clutter around. I still have more to go, and there's a few more photos I want up on the wall as well. The way I have been tackling this, I will have it done in no time! It's a lot of work but it's worth it!

I had yesterday off, so I decided to do more of a spring cleaning since my in-laws are coming down for a visit. That to felt great to accomplish. They are staying with us for a few days, then I should have some time to tackle the last two areas I have. Including to drop off my things/clothes for donation so they are no longer in our basement.

I of course still take time to be in the kitchen. For snacks for the week I tried Joyous Health's dark chocolate superfood bars
I then added this to the freezer for a few hours, then took it out to cut it in bars and added them back to the freezer. This is very tasty!!

Yes these do look a little more like pancakes instead of muffin tops lol However they were still very tasty! I'm pretty sure it's because I used frozen blueberries, the extra water flatten them more out. The only thing I changed was I used coconut sugar instead of white sugar, and I didn't have enough confectioner's sugar, so I added in some coconut flour and it turned out really great. I think next time I'll just use coconut flour, it's sweet tasting and healthier then confectioner's sugar.

And because we loved the sweet potato pad Thai, I had to make it again! I changed one ingredient though, I didn't put cauliflower in but I did add scallops for some protein, and it turned out really good!
This is my new absolute favorite meal! The dressing is so delicious!

We also had a craving for pizza, which I haven't made one in a while, but since I'm avoiding meat as much as possible, I decided to get whole wheat Naan bread to make individual pizzas
This one is mine and I added onion, mushrooms, red pepper, and the base is BBQ sauce, and topped with goat cheese and this feta mozzarella cheese I saw in store and wanted to give it a try. Hubby had the same except instead of shrimp he had shredded BBQ chicken. They turned out really good!
I had enough left overs to make another, but this time I had mine vegetarian. 


My in-laws left early this morning to try to make it in time to watch him play hockey. My dad will be joining us as well. Other then today, I'm not sure what else we will do while they are here, but I'm sure we will have fun. Looking forward to seeing them!

Half Marathon and Veg Fest

My half marathon went really well. We didn't hit our goal time which was under 2 hours and a half but we came close. Here I am at the start of the race

Very proud of us! It was a beautiful day, and it was tough but we made it!
The medal is really nice! The center (Parliament) does spin. Happy that I have finally done the Ottawa Race! We went to an Italian restaurant after, close by and it was nice to sit and relax. My quads were sore for a few days, so I have been taking it easy this week.

Yesterday I did have a great time with 2 friends at the Veg Fest at the RA center. It wasn't huge but it was a good turn out. I got to try some really good vegan food! I of course bought a few things
The muffins I made today, they are the caramel sticky buns. I am pretty sure I shared the recipe a few posts ago, they are so good! It's with lots of eggs and some coconut flour, coconut oil and maple syrup. The topping has some cinnamon and walnuts. So to the right is Blue pomegranate kombucha and I also bought a beet lemonade one as well. I love the glass jars they came in. On the blue lid is a hazelnut chocolate mousse, to the left of that is a carrot caramel. I haven't tried the caramel yet but looking forward to it. I also fell in love with Le Grand, they make "yogurt", dips and pesto's that are so yummy! I think the yogurt was made with almond milk instead of cow milk. The dips, which I got two of the chive and onion is dairy free as well and so delicious! All natural and healthy ingredients. Apparently they sell them at Costco but not their yogurt yet. I may have to make more trips to Costco with my dad so I can get more cause it is really good! The pesto I got tastes just like eating fresh basil! It's so good!!!! The chimichury is also very tasty! I also bought a chocolate cupcake from another vendor there, which I also bought the caramel from and it was really good. I only had a bite of it, and hubby had the rest. I wanted to get him something from the event since he didn't come. It was a great girls day out though. We went to eat at Lonestar after, then walked around and shopped a bit. Got home in time for supper and relax. I also had the opportunity to donate for animal rescues. I am always happy to help animals.

It's been a nice weekend although today it's rainy and gloomy. I have been relaxing at home and giving me a chance to spend time in the kitchen. I boiled a few eggs as well, and I was going to make some homemade crackers but I noticed I have some healthy ones in my cupboard that are going to expire soon so I will eat those up first. After my race last weekend, my dad and I went by the market, I needed to buy some potatoes and my dad decided to buy some homemade bread. She offered him to buy a second one for only $2 so he did, and he gave me one. I did get the chance to eat some and it's really good bread! Thinking maybe to make an egg salad sandwich with the eggs I boiled and with the fresh bread as well. Will make a good lunch. I do plan on doing bento boxes with the dip and crackers, and of course I'll pack up a muffin and some vegetables. Looking forward to lunches this week. Hope everyone is having a good weekend!

Summer

It's been a while again since my last post. It's been a busy summer. With working quite a bit of overtime, we went to bluesfest and got to see a lot of amazing bands like Bryan Adams, Greta Van Fleet, Foo Fighters, Dave Matthews Band, Beck, Colin James, Dear Rouge, Three Days Grace and Rise Against. It was a lot of fun but we were so tired and exhausted. We had taken the first week of July off, and we did things around the house. I did a lot of de-cluttering, we did a bit of shopping, and the Thursday night it was Bryan Adams, the following week we were back at work and saw all those bands so it was a bit of a tough week.

My cousin came down our second week we took off over the summer, the week of August 6th. We went to the Highland games, and went to check out the Mosaic here in Gatineau

The highland games was a lot of fun, but it was very hot outside, so we went into the shade as much as possible. My cousin's daughters and a friend of theirs were with us as well. The Mosaic it was just one of her daughter's and the friend, and it was amazing to see, it was so beautiful there. Again a very warm day but it was harder to find shade. We went to cool down in the Rideau mall after and did some shopping. We went to visit my brother, did more shopping, saw a few movies, and they headed home, than I took some time to do more de-cluttering and doing things around the house.

I went to my brother's on Friday night for game night. I love that they have game night every Friday. It was a lot of fun and my niece did my nails as well, I have a light pink and I love it! Yesterday I had to do some overtime at work and did a few things at home and relaxed. Today I spent most of my time in the kitchen. I started off with making a potato salad, I love cooking the potatoes in the oven, they are a bit more crisp. I added green onions and celery, along with some cumin, paprika and some pepper. I did use mayo and a bit of dijon mustard.  The next thing I did was try out a recipe I saw on Facebook, although I changed it up a bit.
I first started with my mandolin to slice the zucchini but it was to thick and didn't work as well so I than switched to a carrot peeler
It worked a lot better! So I greased the muffin tin with coconut oil, than added zucchini strips in each one like that first one I did, so it's kind of like the crust for the quiche.
Than I stuffed each one with a bit of red onion, tomato, mushroom, and some fresh basil. In a bowl I whisked 10 eggs with a big splash of almond milk, some salt and pepper and a bit of smoked paprika. I filled each cup with the egg mixture
Than topped it with a bit of herb goat cheese and put it in the over at 400 for 30 minutes
They turned out great! I haven't tried one yet but I'm sure they will be delicious! They really did smell really good!  The rest of the zucchini, I cut into bite size pieces and I'll be able to add them into salads. This  past Friday I put together a delicious bento box for my lunch
The Quinoa crackers were really good, well they were extra crispy but tasty. I topped it with the peppered goat cheese (top right container), just below that it was a mix of chicken and kielbasa, to the left of that a kale salad, and above cucumber and blueberries. It was a delicious lunch!!  I haven't had kielbasa in so long and it was on sale so thought why not.

So for the week, my muffin quiches will be my breakfast with either fruit or toast, lunch I am thinking more bento boxes with some potato salad, veggies, I'm thinking shrimp, or fish, and a salad. I am also still exercising, I'm doing spinning, some running, weight exercises and walking. Next weekend is the mud girl run, so I'll post something after to let you know how it went and share a few pictures.

The summer has really gone by fast, I know it's not done yet but we are getting towards the end of August already so going to keep enjoying the beautiful weather as much as I can.

Orange flavored muffins

Christmas came early for my hubby and I. I've been wanting a kitchenaid mixer for a while now, so finally decided this was the year. I have been baking a lot more lately, and it would make baking a lot easier.
I got to try it out today and I love it! It will get used quite often. I watched Pioneer Woman this week and she made orange flavored muffins, so decided to make those, but I did make some changes so it's healthier. Here's the recipe:

2 sticks of softened butter (1 cup)
1 cup of sugar (used coconut sugar)
2 eggs
2 cups of flour (used spelt)
1 cup of buttermilk (used almond milk)
1 tsp of baking soda

Glaze:
2 oranges
1 cup brown sugar (again used coconut sugar)

In a mixer or bowl, cream together the butter and sugar, then add the eggs, flour, milk, and baking soda and mix until well combined. Add the zest of 2 oranges and mix a bit to combine. Add to mini muffin tins and bake it in the oven at 375 for 15 minutes. Then in a bowl put the remaining 1 cup sugar and the juice of the two oranges and mix. Once the muffins come out of the oven, what I did was put them on a plate and then with a spoon I drizzled the glaze on top. This made about 42 mini muffins. Let them cool and enjoy!
My hubby and I tried one and they are really good!  It's a recipe I'll make again, it was simple and they are tasty. I'm also trying out another new recipe for supper. From the Rachael Ray talk show, they made their own scallop potatoes and they looked really good. I'll also cook up some asparagus and pork roast to go with it.

My last post, I said I was going to cut back on meat and gluten to help with my endometriosis pain, well a little update, I have cut back a bit, but last week my hubby and I go pretty sick, his lasted 6 days and it was 4 days for me, and the thing I love to have the most when I'm not feeling well is chicken noodle soup. We are both feeling better and I'm getting back on track, although tonight I do plan on having some pork roast but it will be a small amount. I had some pain yesterday, but today, so far so good.

Summer

As per my last post I mentioned we were going on vacation to Sudbury for our 2 weeks off. The trip to Sudbury was great! His sister's wedding was beautiful, saw family, and got to spend a bit of time at camp
I also had the opportunity to go blueberry picking




I went with my father in law and the trail was narrow but I really do love this view, it's so pretty! At the start the mosquitos were bad but then they left us alone more and we picked quite a few. We brought a picnic and took a break to eat and then got more.



They weren't big but they weren't a bad size. Tried to leave the really small ones there so they can keep growing.




It took us about 3 hours to pick 5 and a half medium zip lock bags, plus about 8 cups, which were used to make 2 blueberry pies
We had one of the pies for our dessert after supper and then brought the other one home along with all the blueberries. I wanted my in laws to take half but they insisted on us bringing them all home with us so we did and I gave one bag to my dad. I froze most of them and used some to add to cereal and yogurt for breakfast, I also made a raw blueberry dessert, and added some to pancakes when my cousin from Alberta was down. She stayed with us last weekend but now she's back home.

We did come home earlier to spend time with my cousin, and also to have time at home before going back to work. It gave me the chance to do some laundry, get some groceries, which I went to the market to get fresh fruits and vegetables. I have been enjoying snacking on peaches and nectarines and with some of the vegetables I made a salad for my lunch
I cooked up 1/4 cup of quinoa in some water, I added fresh corn, just cut it off the cob, and roasted some yellow and red beets, and added sliced radishes. I also added some red kidney beans and for the dressing I put about 2 tbsp of Dijon mustard, a big slash of apple cider vinegar and some olive oil, and added a bit of honey, 1/2 a tsp and also a bit of grated ginger and some pepper.

Something I made today is a recipe I saw on Facebook called floureless peanut butter, chocolate chip mini blender muffins
We both tried one and they are really good!  Here's the recipe:

1 medium ripe banana, peeled
1 large egg
heaping 1/2 cup creamy peanut butter (I used the all natural, meaning peanuts are the only ingredient)
3 tbsp honey (agave or maple syrup) - I used maple syrup
1 tbsp vanilla extract
1/4 tsp baking soda
pinch of salt, optional
heaping 1/2 cup mini semi-sweet chocolate chips - I used regular and it was dark (71%)

Preheat oven to 400F. Prepare mini muffin pan by spraying cooking spray or grease and flour the pan (I used coconut oil) in blender (I just mixed it all in a bowl). Add in first 7 ingredients and blend on high until smooth and creamy, about 1 minute. Add chocolate chips and stir by hand.

Using a tbsp or small cookie scoop form rounded 1 tbsp mounds about 3/4 full

Bake 8-9 minutes or until tops are set. Allow to cool in pan for 10 minutes.
Keeps at room temp up to 5 days or in freezer up to 4 months

They will be a delicious snack! I hope everyone is enjoying their weekend!

Weekend in the kitchen

I know it's been a while since my last post, been pretty busy, but this weekend I took the time to cook up some things in the kitchen. The first thing I made was guacamole, I use the Epicure spice, and instead of using sour cream, I use Greek yogurt, with some lime juice and avocado. Then I ended up making a macaroni salad. I went down to Sudbury last Sunday, and my cousin and I were talking about how hard it is to come up with different ideas to bring for lunch at work. She mentioned macaroni salad, so decided to make it. I made it with brown rice pasta, but another good option is whole wheat pasta. Here's my recipe that I put together yesterday:

Macaroni Salad









1 bag (about 2 cups) of brown rice pasta (macaroni), cooked, and let it cool
3 eggs, boiled, then chopped
2 stalks of celery, diced
1 red pepper, diced
1 large carrot, grated
4 green onions, chopped
4 radishes, halved, then sliced
1 tbsp of fresh parsley, minced
1 tsp paprika
A touch of salt, and lots of pepper
1tbsp of Dijon mustard
1 tbsp apple cider vinegar
Mayonnaise

Cook your pasta first, and let it cool, as well as your eggs. Boil your eggs, which if you want perfectly boiled eggs, the trick is to put the eggs in a pot, and add water till it covers the eggs, put on the stove, covered, and put it on high, once the water boils, turn off the heat only, and don't do anything else, then put a timer of 10 minutes, once the time is up, your eggs are ready. Put under cold water to cool it down, remove the shell, and then quarter the eggs and dice them up. Chop up all your veggies, you can add more or different vegetables if you want, then add to a bowl, along with your eggs and pasta.  Add your spices, then add the Dijon, apple cider vinegar. The mayo, I just add a bit at a time until the salad is well blended. Refrigerate once it's all mixed, and let it cool at least an hour before serving.

This morning, I ended up making some apple pancakes for breakfast. My mom got the perfect recipe for pancakes, we would make some once in a while on weekends, we would usually add apples or freshly picked blueberries. I'll share the recipe in another post. I also made some healthy banana muffins, how is it healthy? Well I used spelt flour, coconut flour and oil, maple syrup and almond milk, chia seeds, along with vanilla, baking powder, baking soda, a touch of salt, and also added walnuts.

I haven't tried a muffin yet, but they smelled so good! Did you have time to cook/bake this weekend? If so, what did you make?
